David Jaram, our Chef
The kitchen at Fishmore is in the very capable hands of Head Chef David Jaram.
David has a passion for innovative dishes and making the very best of local, seasonal produce.
He has always been a keen cook and, after leaving school, worked in various kitchens whilst pursuing a college course. His first professional position was at the acclaimed Close Hotel in Tetbury under head chef Daren Bale.
From The Close, David moved to Newbury to work under head chef Simon McKenzie at Newbury Manor, then in 2005 he upped sticks north to Cheshire to join the team at the acclaimed Nunsmere Hall under Nigel Goodwin, and sous chef Marc Hardiman. David followed Nigel to his new position at The Haycock in Wansford as his junior sous chef. The Haycock provided excellent experience, and the responsibility of heading up a small fine dining restaurant and an 150-cover brasserie, conference and banqueting operation was invaluable.
David then worked at The Greenway in Cheltenham, as sous chef, and with the team maintained the standard of this very highly-regarded restaurant.
The challenge of working on a brand new operation at Fishmore Hall was irresistible. David has created an exceptional restaurant, and is building on his growing reputation, forging relationships with local producers and expanding an already innovative menu.
